Egg Recipe #1 (Fried Eggs in Potato Boats)

Sam, from Lord of the Rings, knew that us potato lovers would relate with his love of this dirty carb pod. Boil ’em, mash ’em, put ’em in a stew. I do all that, and more. I love a good potato recipe, and it isn’t just because they were the only food I could eat whenever I was pregnant without regretting it. Potatoes are so versatile. They can be made a hundred different ways, and I’d never get tired of them.
So this fits right in with my egg-strodinary amount of eggs. I knew that there had to be more than just a handful of ways to combine the two, and I was right. My suspicion is that nearly every culture has a way of making potatoes, and the same with eggs. So why not combine the two? Eggs are fairly versatile as well, and can be served up with minimal or maximum amount of flavors.

A few weeks ago now, I made some Chimichurri with a plethora of herbs and garlic from the garden. This was a good place to start. Chimichurri offers you a good way to spice things up without having to think too deeply. You can use it as a garnish, or to flavor your food. So it’s not unlike potatoes and eggs in that it is very versatile.
I bake a large potato in my air fryer. A good 30 minutes was plenty of time to get it crispy on the outside and fluffy inside. I scooped the flesh of the potato into a bowl and added some Chimichurri, salt, and a sprinkle of Parmesan cheese.


Once it was mixed well, I piled it back into the potato skin and made a nice little bowl in the middle to drop a couple of Quail eggs.



You can open quail eggs however you’d like, but this particular time I used the specially designed scissors to take off the smaller top so that I could save the shells for a project later. Drop the eggs right into the potato bowl. A little sprinkle of salt, and into the oven under the broiler for about 3 minutes. Or, you can slide it into the microwave, covered with a glass bowl for about the same amount of time. The trick is to keep a good eye on them so they don’t over cook! You want them just done, not a solid cooked yolk. When they come out, you want to be able to stir the yolk into the egg. It makes the potato mixture creamy and even more rich tasting.

This is quite an easy, quick and yummy meal. It’s also great for when you want to do a meatless meal. My kids enjoyed them and called them “gourmet” and “fancy”.
What I love about this most is that there are so many different ways that you could make this baked potato. There are endless possibilities to the toppings and fillings, making it really versatile. So go make a potato and egg boat!
