On the Side


I’m not very good at keeping resolutions, but I am pretty good at making myself uncomfortable enough to change (if that makes any sense). Probably like most people, if I get uncomfortable enough I’m bound to take on changing something. So for me, I ordered a box of fresh veggies from my local CSA to force myself into eating better. Because, if you’re also like me, you hate throwing away from food because you let it sit too long. So let’s think of the CSA box as inspiration for me to do better! It’s not that I don’t like healthy food, or cooking. The reality is that I just get lazy, and then y meal consist of toast and coffee. Not exactly great for your body or your health. So cheers to veggies!







Also not much of a fan of squash, I had to come up with some way to make these so that I’d find them appetizing. I stuffed them with flavorful rice pilaf and sauteed veggies, after roasting them in my Airfryer. Not only did I like it, but so did my kids and the neighbor!
